Happy St. Patricks Day, Everyone! That sneaky leprechaun was at our house again this morning. He turned the milk green.....again. I also noticed that Liam's vanilla pudding for his school snack was green, too. Oh my.
Well, I've sent all the kiddos off to school wearing their green. Liam even insisted that he ride his bike to school today because......you guessed it, his bike is green. :-) I'm off for coffee at Angie's (the local one but you can pop up for a diet coke, Ms. Tennessee Angie, if'n ya wanna. lol) Tonight will be the traditional corned beef, cabbage and potatoes and Irish Freckle bread for dessert. No Irish Daddy to enjoy it with us but we will say a blessing over him. :-)

Edited to add recipe for IRISH FRECKLE BREAD:
5-5 1/2 cups flour
1/2 c. sugar
2 tbsp active dry yeast
3/4 tsp salt
1 c. potato water or water
1/2 c butter or margarine
2 eggs
1/2 c. cooked mashed potatoes (room temp)
1 c. chopped dates
In large bowl, combine 1 1/2 c flour with sugar, undissolved yeast and salt. Heat water and butter until very warm. Gradually add to dry ingredients; beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs, mashed potatoes and 1/2 c flour; beat 2 minutes at high speed. With spoon, stir in dates and enough remaining flour to make soft dough. Knead on floured surface until smooth and elastic, about 6-8 min. Place in greased bowl, turning to grease top. Cover; let rise in warm place until doubled in size (about 1 1/2 hr). Punch dough down. On floured surface, shape dough into 4 slender loaves (about 8 in. long). Set 2 loaves, side by side in each of 2 greased loaf pans. Cover; let rise in warm place until doubled in size . Bake at 350 degrees for 35 minutes or until done. Remove from pans. Cool on wire rack.

Well Pinch ME! I didn't put any green on. LOL! Hubby is Scottish so he insists on wearing orange. LOL! We already had the corned beef and cabbage last night. Yummm!
I got a kick out of the Irish Blessing. Nope no frogs in the drawers yet.
